“Linguine with White Bean Scampi: A Delectable Delight”

White Bean Scampi and Linguine
This vegetarian dish has all the flavors and textures of traditional shrimp scampi, but relies on creamy, delicate cannellini bean, a natural fat-free, high fiber protein that will keep you feeling fuller for longer. Vegetarian Scampi Elements
Pasta : Boil whole wheat linguine with salted lukewarm water. If you don’t want to use linguine or angel hair, substitute spaghetti.
Garlic – Sauté the garlic in olive or other oil with black powder, and chili flakes.
Wine: Choose a dry white wine of high quality, such as pinot gris or chardonnay. If you want scampi without wine, leave it out and substitute hen or
vegetable broth.
Tomatoes : Halve ten ounces of Cherry tomatoes.
Spinach Although eight ounces may seem like a lot, it will prepare the dinner.
Beans Drain two cans cannellini. If you like, swap them out for another type of white bean like Nice Northern beans or Navy Beans.
Lemon Juice squeezed out of one lemon.
Butter A tablespoon of butter added at the end will enhance the flavor without adding a lot of fat.
Garnishes : Sprinkle chopped parsley and grated Parmesan.
Cannellini Scampi: How to Make them?
Cook the Pasta: Bring salted water to a boil and add the pasta. It is best to cook it for one minute less than what the package instructs. Reserve a 1/2 cup of the pasta water and then drain the noodles.
Garlic Heat the olive oil on medium heat and cook the garlic, red pepper flakes and black pepper until aromatic.
Scampi sauce: Pour in the wine, bring it to a boil, and reduce the liquid until it is about the consistency of heavy-cream.
Vegetables: Add tomatoes and cook for a few minutes. Add the spinach one handful at a moment, stirring until it wilts. Then, add the rest of the spinach.
Add Pasta: add the linguine, pasta water and increase the heat to medium high. Prepare dinner the meal, stirring occasionally, until the liquid is thickened and incorporated.
Beans Reduce the heat to medium and pour in the beans with the lemon juice. Prepare dinner for one minute.
Serve: Remove the pot from heat, mix in the butter and garnish with parsley.

How to Freeze Vegetarian Scampi
You can freeze this dish for up to three months. The dish can be thawed in the fridge the night before eating and then reheated using the microwave.

Finely grated Parmesan (or vegan parmesan) is available as an optional ingredient.
Bring a large pot of water that has been generously salted to a rolling boil.

Reserve 1/2 cup pasta water and cook the pasta according to the package directions. Drain the pasta.

Heat the olive oil in the same pot on medium heat. Cook the black pepper, red pepper flakes and garlic for 1 minute until aromatic.

Pour the wine into a saucepan and bring to a simmer. Let the liquid reduce thickening.

Add the tomatoes, and cook for one to two minutes. This is just enough time to heat through without letting them soften.

Add the spinach, a large handful at a moment, and stir just until it wilts before adding more, approximately 2 minutes.

The pasta water can be used to stir the pasta. Increase the heat to medium high and cook, stirring occasionally, until the liquid thickens. This will take about one to two minutes.

Reduce the heat to medium. Add the beans, lemon juice and cook dinner for another minute.

Stir the butter until it melts and remove from heat.

Serve immediately, garnished parsley and grated Parmesan.
